Breakfast Sandwiches – Mediterranean Style!

I am off work this week!  The joys of teaching come with a perk.  I admit I am very lucky to have school vacations off.  I finally get to do all the things I wish I could do while I’m busy working.  Today I got to make a delicious breakfast for the boys and myself (Hubby is recuperating after neck surgery so is on a more liquid diet – BellyFULL pops to the rescue).

My boys are beginning to appreciate stacking and building food, burger-style.  Peanut tends to add more variety than does Button, but adapting the presentation of the food, a la family style, helps encourage them to experiment.  Scoring the fridge for ingredients my boys might eat, I pulled together the following hearty and protein-packed breakfast.


4 multigrain sandwich thins

drizzle of olive oil (about 3-4 tsp)

Blob of coconut oil (about 1/2 tsp)

fresh rosemary (I could have used dried also) – about 1/2 tsp

4 eggs

1 large tomato cut into 8 slices

2 cips baby spinnach

1/2 cup feta cheese

pinch of sea salt

pinch of pepper (freshly ground)

My Concoction:

1. Open up sandwich thins and lightly coat sides with olive oil. Toast in oven or toaster for about 5 mins.

2. At the same time, heat up rosemary  and coconut oil in a skillet, then break eggs and gently cook until they are over-easy. I let mine cook for about one minute and then flipped them.  An alternative would be to scramble eggs.

3. On four serving plates (remember I used 3 as Hubby wasn’t having any, I just like to give you a more rounded number), place the lower half of the toasted sandwich thins.  Now I would add the spinach, tomato slices, the egg and a tbsp of feta cheese.  Sprinkle with salt and pepper to taste, top with the other half of the sandwich thin and eat.

I served each ingredient family style so my boys could help themselves to what they wanted and ‘build’ their own creation.  Word of warning: this may backfire as they gobble up favorites and you are left with no eggs to add to your own sandwich! 🙂  I was very impressed, however, that the boys did try everything.  Peanut already eats spinach (believing it is just lettuce) and Button will force a leaf or two down him if pushed.  I notice that he will eat then more easily if they wrap another food, so he wrapped the eggs!!!

  1. Hope your husband is feeling better soon – sounds like the BellyFULL pops are coming in handy. This breakfast sandwich sounds very kid friendly and a nice way to start off the day.

    • They did eat it…but that was a minor miracle. Button, the youngest needed some help working out how to disguise the food he does not like, hence the wrapping of the eggs in the spinach. I also call the spinach “lettuce’ so everyone tucks in. One mention of spinach and I would be doomed to failure. I’ll let them in on it once they are less picky 🙂 We also have many cheerio mornings too (and sometimes as a ‘backwards dinner on very lazy days).

  3. this sounds delicious! another trick, if little noses get turned up re: spinach… grind it up in a blender/cuisinart and let them “drizzle” it upon their meal. (aka: “slime sauce” if you want to appeal to their little boy minds, ha ha).

    • I will be highlighting gluten-free recipes soon as I feel everyone can benefit from reducing their intake. I also have family members who rely on gluten free. You also have to avoid dairy? That is not an area I have had to include in my meal planning. Thanks for stopping by, Crystal xxx.

  4. How very brave to take the leap into hosting your own site! Congratulations, it looks great. I have been thinking that I may do this myself someday in the distant future but it scares me as I am not a tech person by any stretch of the imagination. Ok, silly question – do I need to subscribe to this site so as not to lose you?

    • It has been a scary move but I’m getting the hand of it. Some major bloopers along the way and I want to get someone to design it ‘just so’ one day. I think subscribing via email or the RSS will keep us linked. I think I have to re-subcribe to yours too…have to check. How are you doing with things?

    • I hope you enjoy it, Alaina. I could eat the same cereal all day, everyday…I am naturally lazy when it comes to food. I push myself and then love the results (most of the time) so I do get a varied and mostly healthy diet. I’m going to check out your post on eating healthy foods to get more ideas 🙂

  7. What a great healthy twist on the standard breakfast sandwich. I like the stacking method to make it more appeal-able to kids 🙂 I sooo wish I liked eggs because they are such a healthy breakfast option, but alas I try them time and time again and still hate them 😦 Thanks so much for sharing this with Delicious Dish Tuesday.       I know how hard it is not to like a food that is healthy…I am not partial to most seafood. I have tried time and time again too. I will certainly be back with more recipes and look forward to learning from others on Delicious Dish Tuesday! 🙂
